Menu Plan Mondays - July 11

While I have committed myself to eliminating all meat from my diet, my family isn't quite there yet.  I agreed to add seafood into our weekly menu on one day and a meat dish on one day.  Big Man is generally in charge of cooking on those days.  I usually end up eating just the side dishes.  I absolutely love rice and Big Man really loves fish and rice, so it works out okay.  I've been pleasantly surprised to see how often we end up skipping the meat meal and eat something else instead.  I was absolutely tickled pink yesterday when I was making out my grocery list.  I asked Big Man what he needed me to add for his lunches.  He asked me what he could eat that didn't have meat in it.  He usually just takes a turkey and Swiss sandwich.  For the time being, I told him to try switching to the veggie deli "meat" slices.  Today was his first day with that, so I'm curious to see how he likes it.  


Monday - Eggplant Parmesan with Italian Roasted Potatoes

Tuesday - Spicy Black Bean Burgers with Seasoned Fries

Wednesday - Whatever Wednesday

Thursday - Creamy Avocado Pasta with a Side Salad and Garlic Toast 

Friday - Italian "Sausage" with Peppers and Onions on Soft Polenta

Saturday - Garlic Herb Tilapia with Green Goddess Rice

Sunday - Chicken Crunch with Mashed Potatoes and Green Beans


Also, if you didn't follow my menus at my old blog, then you may laugh at my "Whatever Wednesday."  I always avoid planning a meal for one day each week.  I'm either gone for a dinner with my charity group, Modern Girls Dine, or we end up eating out or leftovers.  These meals move around throughout the week.  I don't always make Monday's meal on Monday.  It's just a weekly plan to get me started.  Those are the meals we'll eat, but not necessarily on the stated day.  In the event a meal doesn't get made, it gets moved to the next week's menu.  I'm hoping to get recipes posted as I perfect them.  Most of these are brand new, so they're not ready for the blog yet!  :)

Welcome!

Hi friends!  Welcome to my blog!  I've recently made some changes in my life, and with that, I am making some drastic changes to my eating habits.  I have toyed around with being a semi-vegetarian off and on for several years.  Now, I'm committed to making the change permanently.  It's time to start getting healthy.  Join me as I share recipes, ups and downs, and day to day experiences.
